This was hands down one of my favorite recipes to eat when I was little. My grandma made it for my sister and I, on nights we would spend the night. It is so delectable and light, which makes it the perfect dish to kick of the week, after a high-carb weekend.

Ingredients:
• 4 chicken breasts
• 1 C flour
• ¼ C (1 stick) of butter
• 2 tsp salt
• 2 ½ tsp of paprika
Lemon Baste:
• ¼ C lemon juice
• 1 tbsp minced onion (fresh is best)
• 2 tsp salt
• 2 tsp pepper
• 2 tsp thyme (fresh is best, but dry works too)
• dash of garlic salt
• 1 tsp minced garlic
• 1 tablespoon oil
• 1 lemon (sliced)
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- Melt sick of butter, and pour into a baking dish.
- Combine flour, salt, and paprika into a dish to dip breasts in.
- Dip each breast into flour mixture completely covering the surface of the meat.
- Lay floured breasts smooth skin down into buttered baking dish.
- Bake for 30 minutes.
- Remove dish from oven, flip each breast so smooth skin is facing up. Brush each breast with the Lemon Baste, using it all.
- Place lemon slices onto of each breast (2-3 per breast).
- Put back in oven and bake until cooked through (~20 minutes).
- Pour juices back over meat, and serve.
Sitting down with my family always brings me so much joy at the end of the day. After long days with toddlers, it is nice to have a minute (or two) to soak in the good times and memories that were made that day. Also great to share a meal with my hubby, and enjoy my food while it’s hot. (His turn to put out toddler fires, ya know?) Happy mealtime! Enjoy!
