
Anyone else think of Will Ferrell screaming, “MA, THE MEATLOAF!” Just me? 🤣 I feel like you either love or hate meatloaf with no in between… and I’m team LOVE IT. Always have. I was always weary of any meatloaf other than my grandma’s growing up, though. As I got older, I started tasting others and trying out different recipes. In typical Holly fashion, I’ve altered many using a little of this, and a little of that. This one though… is GOLD. I’ll still try meatloaf, but I’ll always make this one!
Melt in Your Mouth Meatloaf
Ingredients:
• 2 lbs. ground beef
• 1 sleeve of crushed Club crackers
• 1–1 ½ C shredded cheese*
• ¾ C diced onion (sautéed & softened)*
• 2 eggs
• ½ C of tomato sauce*
• 1 ½ tsp of Worcestershire sauce
• 1 1/2 tsp salt
• ½ tsp pepper
• 1-2 tbs of ketchup (drizzle)
Directions:
- Preheat oven to 350F.
- Dice a small onion, and sauté in a skillet until onions are soft and translucent.
- In a large bowl, mix all ingredients except the ketchup.
- In a greased 9×13 baking dish or baking sheet, form mixture into a loaf shape.
- Drizzle loaf with ketchup.
- Bake for about an hour, and serve with your favorite veggie.
*Notes-
- We love cheese, so we use more. Use less of desired, will still taste good!
- Sautéing the onions suppress the onion flavor, (IMO). I have skipped this step, and used chopped raw, and it was delicious as well!
- If you don’t have tomato sauce on hand, you can substitute ketchup and it works well, too!
