Summer Supper

Nothing is more Midwest summertime to me than fresh garden veggies, the smell of a summer storm sweeping in, and my grandma’s Summer Supper.

But, don’t be fooled… This dish is great ANY time of the year! It is SO simple, flavorful, absolutely delicious. There are so many ways to spruce it up too! I love adding fresh avocado, and even some fresh spinach or arugula to add some green goodness.

Summer Supper

Ingredients:

  • Fried bacon
  • Hard boiled eggs
  • Tomato
  • Bread slices
  • Sliced avocado (optional)
  • 3T butter
  • 2T flour
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 C milk
  • 2 C shredded cheese
  • 1/2 tsp Worcestershire sauce

Directions

  1. Cook bacon, until crispy.
  2. Slice tomatoes & hard boiled eggs
  3. Make the Cheese sauce: Melt 3T of butter, add flour, salt, and pepper. Stir until well blended, and remove from heat. Gradually stir in milk. Return to heat and stir consistently until thick and smooth. Add in shredded cheese and Worcestershire sauce.
  4. Toast bread, then layer on tomato slice, egg slices, bacon, and top with cheese sauce. Enjoy!
