Broccoli Cheddar Soup

When you think of creamy, comfort soup… what comes to mind?? For me— that’s broccoli cheddar or potato! My fridge had some broccoli and carrots that needed some love, so broccoli cheddar was an easy choice! ✨

Homemade Broccoli Cheddar Soup

Ingredients:
2 TBSP butter
2 finely chopped carrots
1 small finely chopped onion
2 cloves of garlic (or 2 tsp minced garlic)
4 cups finely chopped fresh broccoli (about 2 med. heads)
32 oz. (4 cups) of chicken or vegetable broth
3 TBSP flour
1 ½ cups shredded cheddar cheese (or Colby Jack)
¼ cup of cream cheese
1 tsp Salt & ½ tsp pepper to taste

Directions:

  1. Melt butter over medium heat in a large Dutch oven or soup pot. Add carrots and onions until softened— about 2-3 minutes.
  2. Stir in garlic & broccoli, cook until broccoli is bright green.
  3. Pour in broth and bring to a boil, then reduce to simmer and covers cook until broccoli is tender (about 10 minutes).
  4. In a separate bowl, mix 3 tbsp of flour and a ¼ cup of the soup’s liquid. Once mixed, add to soup.
  5. Stir in the milk and turn up the heat for the mixture to thicken.
  6. Add in salt and pepper to taste
  7. Stir in shredded cheese and cream cheese
  8. Serve immediately, with a little shredded cheese on top and a slice of bread or roll.
