Blueberry Torte

I have fond memories of making this delicious dessert with my grandma every year since I was little. It’s a holiday favorite made every Fourth of July. 🇺🇸

Me, at probably age 9, with a proudly made torte.

Ingredients

Crusted base:

  • 1-⅓ C graham cracker crumbs
  • ½ C sugar
  • ⅓ C melted butter

Filling:

  • 8 oz cream cheese, softened
  • 2 eggs
  • ⅓ C sugar

Topping:

  • 1 can of blueberry topping
  • 1 C whipped cream (softened cool whip works best next to homemade)

Directions

  1. Mix together graham cracker crumbs, melted butter, and ½ C of sugar and press into a greased 9 x 13 pan. *I find mixing everything together in a food processor or blender works great for this. 
  2. In a medium bowl blend together cream cheese, eggs, and ⅓ C sugar until smooth. Pour mixture onto crumb base. 
  3. Bake at 350F for 15 minutes. Let cool completely. 
  4. Spread blueberry filling on top. Then layer on the cool whip & berries before serving. 


    *If making ahead of time, wait to add the whipped cream and berries until day of serving.
    *There have been times we completely forgo the berries and cool whip, and just add a squirt or dollop of whipped cream when serving, either works!
Simply made, and just a squirt of whipped cream on top!
