Homemade Waffles & Pancakes

There is something special about homemade breakfasts. The smell of waffles crisping in the waffle iron or pancakes sizzling on the griddle has a way of gathering everyone in the kitchen before the day even begins.

As a homemaker, I’ve found that simple traditions often become the most treasured. Weekend waffles, slow mornings, and little helpers measuring ingredients at the counter create memories that last far longer than the meal itself.

This homemade waffle and pancake recipe has become a staple in our home because it’s simple, uses pantry ingredients, and turns out delicious every time. *Bonus is you can sneak in some fiber or protein powder, and the kids can’t tell! The batter works beautifully for both fluffy pancakes and crispy-on-the-outside, soft-on-the-inside waffles.

Homemade Waffles & Pancakes

Ingredients

  • 1 ½ cups organic all-purpose flour
  • ¼ C sugar
  • ¼ C ground flax seed
  • 3 1/2 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 1 ¼ cups milk
  • 3 tbsp melted butter
  • 1 ½ tsp vanilla extract

Directions

  1. In a large bowl, whisk together the flour, sugar, baking powder, flax seed, and salt.
  2. In a separate bowl, or large measuring cup, whisk together the milk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are perfectly fine.
  4. For pancakes, pour about ¼ cup batter onto a preheated griddle, or non stick pan, and cook until bubbles form on the surface. Flip and cook until golden brown.
  5. For waffles, pour about ¼ cup batter into a preheated waffle iron and cook according to your waffle maker’s instructions until golden and crisp. This one is one we use for the small “eggo” copycats.

Tips

  • Add fresh blueberries, chocolate chips, or cinnamon for extra flavor.
  • Freeze leftovers for quick weekday breakfasts.
  • Serve with fresh fruit, maple syrup, whipped cream, or a dusting of powdered sugar.
